That's been going on for a while, ever since Hump did away with those tubs of awful processed lemon slices. Some managers are so embarassed they just buy them themselves.

Under ring a couple of pint,s of bitter and buy lemon,s from that, even with the 5% you should be able to do it.Up to leaving a few year,s ago I still filtered back along with other manager,s,we all kept back the equipment, and bought filter paper,s,again by under ringing a couple of pint,s.
So if you know what you are doing there,s way,s around most thing,s. :o

Filtering back?  Isn't that a bit naughty?  Does anyone know how legal it is?

With regards the lemons and oranges, one manager buys them and puts a  receipt into the brewery and says stuff Humphrey.Others are more cautious and buy them themselves. I think that filtering back is extremely naughty. I have been in one Sams pub a while ago that used the beer out of the drip tray to start a new pint of Sovereign. Not good.

It's something that went on until the 1970s but has largely gone.

However, saying that, I used to work in one of the best real ale pubs in the city and it went on.  Cutstomers were not aware, generally, however, some could tell with taste, etc.

I was instructed to filter back myself, and hair, fruit flies and wasps amongst other things were left on the filter paper.  DISGUSTING.

If filtering good beer that is left in a barrel into the next barrel, in the cellar, then it is quite legal and is done a lot more than some people think.  It is quite illegal and  improper to filter back slops from a drip tray.  For me anyone who stoops that low as to do it should be reported to env. health.

I totally agree.  Until the 1970s it was the mild that had everything filtered back into it...those were the days!  No wonder real ale sales fell and keg grew.

I agree with you sovsuppa that the environment authority should be aware of bad practice in Sams pubs. But i do understand that managers are under pressure to give Humphrey the 5% surplus that he demands nowadays.

Filtering back was stopped by Hump around 2000 when he went into a cellar and saw carrot,s in the filter pan.
It was legal to filter back beer pulled through whilst cleaning the line,s and what was left remaining in a "used barrel" that,s why filtering equipment was in every Sam,s cellar.including a racker to enable barrel,s to be tipped up to get as much out as possible, manager,s up to 2000 will of course remember this !
Anyone filtering drip tray and other wastage would have been sacked if found out.and rightly so.

Oh yes...the legendary Mild barrel...filter all the slops back into it, mix in a couple of bottles of tonic water to improve the flavour, covers up all manner of sins !

Waiting in Sams pubs has now unfortunately become the norm, due to lack of staff hours and managers been overstretched. I wish he would jsut allocate a decent number of hours to the managers, then customers would not walk out, as quite a few have done recently. Also noticed a large amount of new customers coming into my local. Has the secret been unlcoked.

Theres a clear choice for all people. They can wait a short while for a darned good pint at a decent price. Alternatively they can be served immediately and buy overpriced mass produced beer. Its a free world
