I don't think you have read the article fully and it certainly doesn't mean that there is ?2.10 profit on each pint if it costs 90p to brew. There are many overheads in retail trade, rent, heat light, staff, etc, etc. One of the reasons that Humphrey can charge so low a price is that his (large) estate is paid for and stands them at zero in terms of revenue expenditure, coupled with the fact that they are all managed and he pays his staff a very low wage.
Compare this with many of the pub companies who have nothing but a business plan based on borrowed money with a high revenue expenditure, hence they have to charge very high rents that are unsustainable and pubs close or struggle because prices are so high.
In some ways Humphrey is spot on and is to be reccommended, his enterprise is almost self sustaining, lots of pubs, jobs in pubs & brewery. The down side is that some of his methods would be laughable if they weren't so bizarre. There is definitely a sit com/play based upon Sams & Humphrey, based on either the brewery or a pub.
