Humphrey Smith - don't you think it's about time you caught up with the real world? You may be very good and experienced at running a brewery - but you are completely useless at running pubs. And your people communications skills.. - well let's not even go there!
As you continue to drive staff-hours down, creating further burdens on managers and staff - which make your venues either, 1). Illegally paying below the minimum wage, as managers work the extra unpaid hours, or 2). Venues which go down the pan, as managers, physically, have not enough PAID hours within the week, to do what is required to run a tidy, safe, profitable pub.
Mr Smith- why not get independent professionals, to do a 'time and motion study', on a variety of your venues, to honestly ascertain how many staff hours are required to safely run an establishment, without having to break any laws.
And whilst I've got your attention, let me tell you this..
If you worked for me (which is unlikely because you wouldn't have got through the first round of interviews) by now, as your boss, I would be telling you this..
For God sake man, get your act together! You are unpopular with the staff, and have very little business acumen. If you want to keep your job, you will have to stay within the bounds of running the brewery - and not the retail end - which is best left to experienced professionals. The business would therefore benefit from an experienced manager overseeing all of the retails sector - pubs, hotels, etc. If you are not happy with this directive, then I suggest you take an early retirement - before you are sacked for incompetence, and committing a number of serious crimes - which will be duly investigated by the Police, and the Inland Revenue.
