In the now-distant past, every brewery had a team of coopers on hand to build oak tanks and casks. When stainless steel came along, it replaced most brewhouse oak--but not at Samuel Smith's Brewery in Tadcaster. Smith's Old Brewery Bitter is still sent to pubs in oak casks, and this video shows how they're made.
The gentleman in the suit is Steve Barrett, the Head Brewer at Smith's. He's set to retire in April 2012 after more than two decades on the job. David Poulter is the brewery's long-time cooper.
